One Pot Creamy Cajun Sausage Pasta

1.5–2 lbs smoked sausage or andouille sausage, sliced
2 bell peppers, chopped
1 medium onion, chopped
4–5 cloves garlic, minced
5 cups chicken broth
16 oz ditalini pasta (full box)
2 packages Boursin cheese
2–3 tsp Cajun seasoning (adjust depending on spice tolerance)
1 tsp salt (or to taste)
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
Directions
Brown the sausage
In a large pot (and I mean your BIG one), cook the sliced sausage over medium heat until browned.
Add the veggies
Add bell peppers and onion. Cook for 4–5 minutes until softened, then stir in garlic for about 30 seconds.
Season it up
Add Cajun seasoning, salt, pepper, onion powder, and garlic powder. Stir everything together.
Add broth + pasta
Pour in chicken broth and add the entire box of ditalini pasta. Stir well.
Cook the pasta
Bring to a boil, then reduce to a simmer. Cook uncovered for about 12–15 minutes, stirring occasionally, until pasta is tender.
(If it starts looking dry before pasta is done, add a splash more broth.)
Make it creamy
Turn off heat and stir in both packages of Boursin cheese until melted and creamy.
