1 lb dried red kidney beans, rinsed
(soaked overnight recommended but not required — see cook times below)1 lb beef andouille sausage, sliced into rounds
1 medium onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 tsp Cajun seasoning (adjust to taste)
1 tsp salt (or to taste)
½ tsp black pepper
5–6 cups chicken stock or water (slow cookers need more liquid than Instant Pot)
1 bay leaf (optional but recommended)
2 cups cooked white rice (for serving)
Directions
- Brown the Sausage
Cook sausage in a skillet over medium heat until browned.
Set aside. - Sauté Aromatics (Optional but Recommended for Flavor)
In the same skillet, sauté onion, bell pepper, and garlic for 3–4 minutes until softened.
Stir in Cajun seasoning.
(You can skip this step and add everything raw to the slow cooker if you’re short on time, but sautéing adds more flavor.) - Add to Slow Cooker
Add to slow cooker:
• Beans
• Sausage
• Onion mixture
• Chicken stock
• Bay leaf
• Salt & pepper
Stir well.
Cook Time Options
•If Beans Were Soaked Overnight
• LOW: 6–7 hours
• HIGH: 3–4 hours
•If Beans Are NOT Soaked
• LOW: 8–10 hours
• HIGH: 5–6 hours
Beans should be very tender when done. - Make It Creamy (Signature Step)
Remove about 2 cups of beans + broth, blend until smooth, then stir back into the slow cooker.

Taste and adjust:
• Salt
• Cajun seasoning
• Pepper
If too thick → add more broth.
If too thin → cook uncovered 20–30 minutes on HIGH. - Serve
