2 lb ground beef
1 bell pepper, diced
4 cloves garlic, minced
2 tbsp tomato paste
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika
2 tsp chili powder
2 tsp ground cumin
1 tsp black pepper
1–1½ tsp salt (to taste)
2 cup uncooked rice
2 cups beef broth
1 (10 oz) can enchilada sauce
1 (4 oz) can diced green chilies
1 cup frozen corn
1 (15 oz) can black beans, drained and rinsed
1–2 cups shredded cheese (Mexican blend or cheddar)

Directions
- In a large skillet or deep sauté pan, cook the ground beef over medium heat until browned. Drain excess grease if needed.
- Add the diced bell pepper and garlic. Cook for 3–4 minutes until softened.
- Stir in the tomato paste, garlic powder, onion powder, paprika, chili powder, cumin, black pepper, and salt. Let everything cook together for about 1 minute so the spices get nice and fragrant.
- Add the uncooked rice, beef broth, enchilada sauce, green chilies, corn, and black beans. Stir well.
- Bring everything to a gentle boil, then reduce heat to low. Cover and simmer for about 18–22 minutes, stirring occasionally, until the rice is tender
- Once the rice is cooked, sprinkle the cheese over the top. Cover again for 2–3 minutes until melted and gooey.
- Serve warm with your favorite toppings.
