Dinner Ideas: Chicken Pot Pie Orzo

April 6, 2026

Craving chicken pot pie but not in the mood to wrestle with pie dough? Same. This Chicken Pot Pie Orzo skips the rolling, crimping, and baking drama and gets straight to the good part: creamy, cozy comfort in every bite.

Tender chicken, buttery vegetables, and a rich, savory sauce come together with orzo that soaks up all that goodness like it was born for this moment. It’s giving pot pie energy without the extra effort. And honestly? You won’t miss the crust nearly as much as you think you will.

Perfect for weeknights when you want something warm and satisfying (but also easy), this is the kind of recipe that feels a little indulgent, a little practical, and totally worth adding to your regular rotation.

Ingredients

  • 2–3 cups shredded rotisserie chicken

  • 1 cup dry orzo pasta

  • 3 tbsp butter

  • 1 small onion, diced

  • 2 celery stalks, diced

  • 2 medium carrots, diced small

  • 3 cloves garlic, minced

  • 1 can cream of chicken soup

  • 2 ½ cups chicken broth

  • 1 tsp poultry seasoning

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

Directions

  • Start with your flavor base (don’t skip this part):u2028In a large pot or deep skillet, melt the butter over medium heat. Add your onions, celery, and carrots. Sauté for about 5–7 minutes until everything starts to soften.
Add in the garlic and cook for another 30 seconds until fragrant.
  • Build that creamy base:u2028Stir in the cream of chicken soup and chicken broth. Mix until smooth and combined.
Add poultry seasoning, salt, and pepper. Let it come to a gentle simmer.
  • Cook the orzo right in the pot:u2028Stir in the dry orzo and let it cook in the liquid for about 8–10 minutes, stirring occasionally so it doesn’t stick.
This is where it starts giving pot pie filling vibes.
  • Add your chicken:u2028Once the orzo is tender and the mixture has thickened, fold in your shredded rotisserie chicken.
Let everything simmer together for another 3–5 minutes so the chicken heats through and soaks up all that flavor.
  • Adjust and serve:u2028If it gets too thick, add a splash of chicken broth. Taste and adjust seasoning if needed.
Serve warm and watch your family come back for seconds like you didn’t just throw this together in one pot.
