Ingredients

  • 2–3 cups shredded rotisserie chicken

  • 1 ½ cups sour cream

  • 1 can diced green chilies (drained)

  • 2 cups shredded cheese (Mexican blend or Monterey Jack), divided

  • 8–10 tortillas (flour or corn)

  • ¼ cup fresh cilantro, chopped (optional)

  • Salt + pepper to taste

  • Cilantro Substitute (for the cilantro skeptics like my haters Drue, Tiger and Cow):
    If cilantro is not your thing, swap it with:
    • Fresh parsley (closest in color, mild flavor)
    • OR a little sliced green onion for a light, fresh bite
    Same vibe, no “this tastes like soap” complaints.

Directions

  • Preheat + prep:u2028
    Preheat oven to 350°F and lightly grease your baking dish.
  • Make the creamy filling:u2028
    In a large bowl, mix together:
    • shredded chicken
    • sour cream
    • green chilies
    • 1 cup of the shredded cheese
    • cilantro (or your substitute)
    • salt + pepper
    Mix until everything is well combined and creamy.
  • Fill + roll:u2028
    Spoon the mixture into each tortilla, roll them up, and place seam-side down in your baking dish.
  • Make it extra creamy:u2028
    Take a few spoonfuls of sour cream and lightly spread over the top of the enchiladas (this keeps everything soft and rich).
  • Add the cheese (don’t be shy):u2028
    Sprinkle the remaining cheese all over the top.
  • Bake:u2028
    Bake uncovered for 20–25 minutes until heated through and the cheese is melted and bubbly.
  • Serve:u2028
    Let it sit for about 5 minutes before serving so everything sets up just right.
