Creamy, cheesy, and packed with bold flavor, these Creamy Chicken Enchiladas are the kind of dinner that disappears fast. Tender shredded chicken gets wrapped up in soft tortillas, smothered in a rich, savory sauce, and baked until everything is bubbling and golden in all the right places.
The filling is hearty and satisfying, with just the right balance of creamy richness and enchilada-style spice that keeps every bite interesting. It’s the kind of meal that feels comforting and familiar but still delivers enough flavor to make it worth craving.
Perfect for feeding a crowd, stocking the fridge with leftovers, or pulling together on a night when you need dinner to work out without much drama, this recipe keeps things simple while bringing serious comfort to the table.

2–3 cups shredded rotisserie chicken
1 ½ cups sour cream
1 can diced green chilies (drained)
2 cups shredded cheese (Mexican blend or Monterey Jack), divided
8–10 tortillas (flour or corn)
¼ cup fresh cilantro, chopped (optional)
Salt + pepper to taste
Cilantro Substitute (for the cilantro skeptics like my haters Drue, Tiger and Cow):
If cilantro is not your thing, swap it with:
• Fresh parsley (closest in color, mild flavor)
• OR a little sliced green onion for a light, fresh bite
Same vibe, no “this tastes like soap” complaints.
