As the leaves turn golden and the crisp autumn air rolls in, there’s nothing quite like curling up with a cozy bowl of pasta – especially when it’s creamy, dreamy, and bursting with the rich, tangy flavor of sun-dried tomatoes. This is fall comfort food at its finest: warm, hearty, and just fancy enough to make you feel like you totally have your life together (even if you’re still in sweatpants at 6 PM).

This creamy sun-dried tomato pasta is the perfect weeknight dish for when you want big flavor with minimal effort – think creamy garlic-kissed sauce, savory sun-dried tomatoes, and a sprinkle of herbs. So grab your coziest sweater, light that cinnamon candle, and let’s dive into a bowl of autumn happiness!

What You’ll Need:

  • 8 oz pasta of choice (penne, rigatoni, or fettuccine work great)
  • 1/2 onion, finely chopped
  • 1 shallot, finely sliced
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes (in oil), chopped
  • 2 tbsp tomato paste
  • 1/3 cup white wine (or chicken broth)
  • 5.2 oz Boursin cheese (garlic & herb flavor)
  • 1 tbsp lemon juice
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt & black pepper, to taste
  • 4 Tyson crispy chicken tenders (cooked according to package)
  • Reserved pasta water (as needed)
  • Optional: Fresh basil or Parmesan for garnish

How To Make It:

  1. Cook pasta:
    Boil pasta in salted water until al dente. Reserve 1 cup pasta water before draining.
  2. Sauté aromatics:
    In a large skillet over medium heat, sauté onion, shallots, and sun-dried tomatoes in 1 tbsp of the oil from the jar for 2–3 minutes. Add garlic and cook another 30 seconds.
  3. Deglaze with wine:
    Stir in tomato paste and cook for 1 minute. Add white wine and simmer until reduced by half (2–3 min).
  4. Make it creamy:
    Lower the heat and stir in Boursin cheese until melted and creamy. Add lemon juice, basil, oregano, salt, and pepper. Use reserved pasta water to loosen sauce as needed.
  5. Toss pasta:
    Add cooked pasta to the sauce and toss until fully coated. Simmer 1–2 minutes to let flavors meld.
  6. Top it off:
    Plate the pasta and top each serving with a crispy Tyson chicken tender.
  7. Garnish & serve:
    Optional: Sprinkle with fresh basil, grated Parmesan, or a drizzle of sun-dried tomato oil for extra richness.
