For the crispy garbanzo beans:
• 2 cans garbanzo beans (chickpeas), drained, rinsed, and VERY well dried
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• ½ tsp salt
• ½ tsp black pepper
For the salad:
• 2 cans northern beans, drained and rinsed
• 1 ½ cups mozzarella pearls
• ½ small red onion, finely diced
• 1 cup cherry tomatoes, halved
• ½ cup cucumber, diced
For the chimichurri:
• 1 cup fresh parsley, finely chopped
• 3 cloves garlic, minced
• 2 tbsp red wine vinegar
• ½ cup olive oil
• 1 tsp oregano
• ½ tsp crushed red pepper flakes (optional but recommended)
• Salt + pepper to taste

How To Make It:
- Make your crispy garbanzo beans (this is where the magic starts):
Preheat oven to 400°F. Toss your dried chickpeas with olive oil and all the seasonings. Spread them out on a baking sheet in a single layer. Bake for 25–30 minutes, shaking halfway through, until crispy and golden.
(And yes… make extra because your kids will snack on these before dinner.) - Mix your salad base: In a large bowl, add your northern beans, mozzarella pearls, red onion, tomatoes, and cucumber. Give it a gentle toss so everything is evenly distributed.
- Make the chimichurri: In a separate bowl, combine parsley, garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and pepper. Stir it up until it’s nice and vibrant.
- Bring it all together:
Pour the chimichurri over the bean mixture and toss until everything is coated.
Right before serving, fold in your crispy garbanzo beans so they stay crunchy. - Don’t forget the Chickpeas
If you let this sit for about 15–20 minutes before serving, the flavors really come together…but add the crispy chickpeas LAST so they don’t get soft.
