Creamy pasta and smoky Cajun sausage are a combination that never misses, and this one-pot version makes it even better. Bold seasoning, rich sauce, and tender pasta all come together in one pan for a dinner that feels indulgent without creating a pile of dishes in the sink.

One Pot Creamy Cajun Sausage Pasta

Ingredients


  • 1.5–2 lbs smoked sausage or andouille sausage, sliced


  • 2 bell peppers, chopped


  • 1 medium onion, chopped


  • 4–5 cloves garlic, minced


  • 5 cups chicken broth


  • 16 oz ditalini pasta (full box)


  • 2 packages Boursin cheese


  • 2–3 tsp Cajun seasoning (adjust depending on spice tolerance)


  • 1 tsp salt (or to taste)


  • 1 tsp black pepper


  • 1 tsp onion powder


  • 1 tsp garlic powder

Directions


  • Brown the sausage
    In a large pot (and I mean your BIG one), cook the sliced sausage over medium heat until browned.

  • Add the veggies
    Add bell peppers and onion. Cook for 4–5 minutes until softened, then stir in garlic for about 30 seconds.

  • Season it up
    Add Cajun seasoning, salt, pepper, onion powder, and garlic powder. Stir everything together.

  • Add broth + pasta
    Pour in chicken broth and add the entire box of ditalini pasta. Stir well.

  • Cook the pasta
    Bring to a boil, then reduce to a simmer. Cook uncovered for about 12–15 minutes, stirring occasionally, until pasta is tender.
    (If it starts looking dry before pasta is done, add a splash more broth.)

  • Make it creamy
    Turn off heat and stir in both packages of Boursin cheese until melted and creamy.
