Let’s be real—between school drop-offs, soccer practice, and the mountain of laundry that never seems to shrink, who has time to cook elaborate meals every night? If you’re anything like me, you’re always on the hunt for tools that make dinner quick, easy, and still delicious. Enter the PowerXL, my latest kitchen obsession! This little powerhouse has been a total game-changer, and today I’m going to walk you through why it deserves a spot on your countertop. Plus, I’ll share a mouthwatering recipe that’s perfect for busy weeknights: One Pot Chicken & Rice.

Why the PowerXL Is a Lifesaver

When I first heard about the PowerXL, I was skeptical. Another fancy gadget promising to save time? But let me tell you, it actually delivers. Whether you’re whipping up a quick breakfast or a hearty dinner, the PowerXL makes cooking faster and cleanup a breeze. It combines the magic of an air fryer, slow cooker, and pressure cooker all in one. That means fewer pots and pans to wash, which is a win in my book!

One Pot Chicken & Rice: A Weeknight Hero

The first dish I tried in my PowerXL was One Pot Chicken & Rice, and it was an instant hit. Not only is it a one-pot wonder, but it’s also packed with flavor. Here’s how you can make it yourself:

Ingredients

  • 4-6 tablespoons butter
  • 1 cup carrots, chopped
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon sage
  • 2 cups long grain white rice (no minute rice!)
  • 1 teaspoon minced garlic
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried parsley
  • 8 cups chicken broth
  • 1.5 cups cooked chicken (I used rotisserie)
  • Salt & pepper

Instructions

  1. Sauté the Veggies: Start by melting 2 tablespoons of butter in the PowerXL on the sauté setting. Toss in the chopped carrots and season with garlic powder, onion powder, paprika, sage, and a pinch of salt. Sauté until tender.
  2. Toast the Rice: Add the rice, minced garlic, and dried minced onion to the pot. Stir everything for about a minute to coat the rice in that buttery goodness.
  3. Add the Broth and Spices: Stir in the dried parsley and chicken broth. Bring it all to a boil while scraping the bottom to prevent sticking.
  4. Cook the Rice: Reduce the heat to medium-low and let the rice cook for about 20 minutes, stirring occasionally. You’ll know it’s ready when the rice is tender and most of the liquid is absorbed.
  5. Finish with Chicken: Stir in a few more tablespoons of butter for extra richness. Then, add the rotisserie chicken, season with salt and pepper to taste, and give everything a good mix.
  6. Serve and Enjoy: Dish it up and watch your family devour it!

Why This Recipe Works for Busy Parents

The best part about this recipe? It’s foolproof. The PowerXL ensures that everything cooks evenly, and the flavors come together beautifully. Plus, it’s versatile. You can swap out the chicken for shrimp or add in some peas or spinach for extra veggies. One night, I even tossed in a handful of shredded cheese at the end for a creamy twist—it was a hit!

A Personal Win

The first time I made this dish, my oldest, who usually doesn’t try new recipes, asked for seconds. That alone made the PowerXL worth every penny. And cleanup? A quick rinse and wipe, and I was done.

Final Thoughts: Let’s Simplify Dinner Together!

If you’re feeling overwhelmed by dinnertime chaos, I highly recommend giving the PowerXL a try. It’s made my life so much easier, and I’m sure it’ll do the same for you. Have you tried the PowerXL yet? Or maybe you have a favorite one-pot meal of your own? I’d love to hear your thoughts! Drop a comment below, and let’s keep the conversation going.

Happy cooking, friend—you’ve got this!
