Why I Love This Meal

I love making these Instant Pot Meatball Subs for my family. With five kids, finding meals that are both quick and delicious is a must, and this recipe hits the mark perfectly. The pressure cooker makes everything so much easier and faster, allowing me to have a hearty, home-cooked meal ready in no time.

The meatballs cook up perfectly tender and flavorful in the sauce, and the whole process is incredibly hands-off. While the meatballs are cooking, I can toast the hoagie rolls and get everything else ready, making it an efficient use of time. This meal is a huge hit with my family of seven, and it’s a wonderful way to bring everyone together around the dinner table without spending hours in the kitchen.

Ingredients For This Meal

    •    1 pound of meatballs (store-bought or homemade)
    •    1 cup shredded mozzarella cheese
    •    4 hoagie rolls
    •    1/2 cup rosso pesto sauce
    •    1 cup crushed tomato sauce
    •    1 teaspoon Italian seasoning
    •    1/2 teaspoon black pepper

Instructions

    1.    Prepare the Meatballs:
    •    If you’re using store-bought meatballs, they are ready to go! If you’re making your own, prepare and shape them into bite-sized balls.
    2.    Cook the Meatballs in the Instant Pot:
    •    Pour the crushed tomato sauce into the Instant Pot.
    •    Add the rosso pesto sauce, Italian seasoning, and black pepper. Stir well to combine.
    •    Place the meatballs into the sauce, making sure they are evenly coated.
    •    Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
    •    Once the cooking time is up, do a quick release of the pressure.
    3.    Toast the Hoagie Rolls:
    •    While the meatballs are cooking, preheat your oven to 350°F (175°C).
    •    Slice the hoagie rolls in half and place them on a baking sheet.
    •    Toast them in the oven for about 5 minutes, or until they are golden brown and crispy.
    4.    Assemble the Subs:
    •    Once the rolls are toasted, place a generous amount of meatballs and sauce onto each roll.
    •    Sprinkle shredded mozzarella cheese over the meatballs.
    5.    Melt the Cheese:
    •    Place the assembled subs back into the oven for a couple of minutes until the cheese is melted and broiled.
    6.    Serve and Enjoy:
    •    Remove the subs from the oven, let them cool for a minute, and then dig in!
